Abstract:
Pickering emulsions, stabilized by solid particles, exhibit excellent stability and biocompatibility, making them promising in various fields such as biomedicine, cosmetics, and food industries. Fabrication of Pickering emulsion systems with specific structures is crucial to meet the diverse demands for emulsion performance in different fields. In this article, four types of typical Pickering emulsions: high internal phase Pickering emulsions, double emulsions, multilayer particle-stabilized emulsions, and microclusters have been reviewed, focusing on their structural characteristics, preparation methods, and current applied researches. The advantages and existing challenges in their respective applied fields have been analyzed and discussed. This review provides some valuable information for the research and application of Pickering emulsions.
