Research Advances on Preparation and Application of Pickering Emulsions with Different Structure Types

  • 摘要: Pickering乳液作为一种由固体颗粒稳定的乳液体系,凭借其优异的稳定性和生物相容性,在生物医药、化妆品和食品工业等领域展现出了良好的应用前景。制备具有特定结构的Pickering乳液系统是满足不同领域对乳液性能需求的关键。文章对四种典型的Pickering乳液:高内相Pickering乳液、双重乳液、多层颗粒稳定的乳液和微簇进行了综述,重点介绍了其结构特性、制备方法和应用研究现状,分析并探讨了它们在各自应用领域的优点以及面临的挑战,以期为Pickering乳液的研究和应用提供参考。

     

    Abstract: Pickering emulsions, stabilized by solid particles, exhibit excellent stability and biocompatibility, making them promising in various fields such as biomedicine, cosmetics, and food industries. Fabrication of Pickering emulsion systems with specific structures is crucial to meet the diverse demands for emulsion performance in different fields. In this article, four types of typical Pickering emulsions: high internal phase Pickering emulsions, double emulsions, multilayer particle-stabilized emulsions, and microclusters have been reviewed, focusing on their structural characteristics, preparation methods, and current applied researches. The advantages and existing challenges in their respective applied fields have been analyzed and discussed. This review provides some valuable information for the research and application of Pickering emulsions.
